Saturday Baking- Blueberry Buckle

Saturday was a washout with all the rain from hurricane Hannah so I decided to bake an old family favorite- Blueberry Buckle. We started baking buckles (say that ten times fast!) when my family lived in Massachusetts where our house bordered some woods. All the neighborhood kids would play there and pick wild blueberries! My mom made all kinds of things out of the berries, but our favorite was and still is this recipe from ‘The Boston Globe.’

Blueberry Buckle Recipe

Oven temp: 350; Grease 9″x9″ pan
Blend in bowl the following ingredients:
3/4 cup sugar
1/4 cup margarine
2 eggs
1/2 cup milk
In separate bowl combine:
1 and 1/2 cups flour
2 teaspoon baking powder
1/2 teaspoon nutmeg
1/4 teaspoon cloves (optional)
Now add to batter.
Spread mixture into pan.
In a third bowl mix together until crumbly:
1/3 cup sugar
1/3 cup flour
1/4 teaspoon cinnamon
1/4 cup margarine
Lastly add: 1 and 1/2 cup blueberries

Sprinkle the crumbly blueberry mixture on top of batter and bake 40- 50 minutes. Serve warm with milk or ice cream! Enjoy!
